Thai Pineapple Fried Rice



This is one of my favorite thai dishes, however I have eversee it being served in the Thai restaurants in sydney. It is usually served beautifully in a pineapple 'shell' but I am too lazy to do that. I discovered the recipe in a cook book called Simply Thai. The recipe was great though, ask marvin for the review :) Its really easy to make and doesnt take lots of time. Enjoy!

Recipe serves 4

Ingredients:
2 cups cooked Jasmine Rice, (Note: do not make rice too wet as it will stick to the pan)
250g prawn or chicken, coarsely diced
1/2 pineapple, cut into cubes (Note: drain the xs juice from the pineapple as u do not want the fried rice to be wet ad sticky)

3 shallots
4 cloves of garlic
3 stalks coriander
pork floss for garnishing

Seasoning:
1.5 tbsp red curry paste
1.5 tbsp of curry powder
salt to taste
Note: amount of red curry and curry powder used depends on how spicy you want it to be.


Instructions:

1) Blend shallots,garlic and coriander into a fine paste.
2) Heat oil in wok and fry the paste till fragrant, then add red curry paste and curry powder, fry till fragrant.
3) Add rice and until rice is evenly mixed with paste.
4) Add prawns/ chicken and fry till cooked.
5) Add salt to taste.
6) Lastly, add pineapple and mix until even, then quickly turn off the fire.
7) Garnish with pork floss and coriander.
