Thai Pineapple Fried Rice



This is one of my favorite thai dishes, however I have eversee it being served in the Thai restaurants in sydney. It is usually served beautifully in a pineapple 'shell' but I am too lazy to do that. I discovered the recipe in a cook book called Simply Thai. The recipe was great though, ask marvin for the review :) Its really easy to make and doesnt take lots of time. Enjoy!

Recipe serves 4

Ingredients:
2 cups cooked Jasmine Rice, (Note: do not make rice too wet as it will stick to the pan)
250g prawn or chicken, coarsely diced
1/2 pineapple, cut into cubes (Note: drain the xs juice from the pineapple as u do not want the fried rice to be wet ad sticky)

3 shallots
4 cloves of garlic
3 stalks coriander
pork floss for garnishing

Seasoning:
1.5 tbsp red curry paste
1.5 tbsp of curry powder
salt to taste
Note: amount of red curry and curry powder used depends on how spicy you want it to be.


Instructions:

1) Blend shallots,garlic and coriander into a fine paste.
2) Heat oil in wok and fry the paste till fragrant, then add red curry paste and curry powder, fry till fragrant.
3) Add rice and until rice is evenly mixed with paste.
4) Add prawns/ chicken and fry till cooked.
5) Add salt to taste.
6) Lastly, add pineapple and mix until even, then quickly turn off the fire.
7) Garnish with pork floss and coriander.

Cafe Sopra @ Fratelli Fresh

I visited this cafe with MKBJ in Nov 08 by recommendation of eatability! The food was amazing, we were blown away by everything tt we ordered! The atmosphere was really rustic and comfortable for a long lazy lunch. It is located on Danks St in Waterloo, only just a few steps from Hillsong church (my favour-dest church!). They have a branch in Potts Point too, but the waterloo atmosphere is so much better and peaceful. Cafe Sopra is a cafe that is attached to Fratelli fresh which is a grocery store with emphasis on fresh food and italian groceries. Check out the groceries even if you dont feel cafe, so interesting! anyways here's wat we devoured!!!

ENTREE: We had the Cured Meat Platter which was simple yet sublime... It had 4 cuts of fresh cured meat namely pancetta, prosciutto, smoked ham and salami and topped with lemon juice. The flavours of each meat was so distinct thought all made from pork. yummy...

MAIN : We had the panfried SARDINE BUSCHETTA topped with pesto. Lovely!!! The simple bruschetta had been turned into this! The panfried sardine melted i ur mouth and the sourdough at the bottom of the dish was soaked with the tomato puree and juices of the fish. Even guys who only eat meat would give way.

DESSERT: We were really full after mains but as the galz say 'therez always space for dessert' (personally i tink tt we subconsioucly dnt finish our mains so we can save space for dessert, but WHO CARES!) We had simple strawberry and lemon gelato for dessert! It was OUT OF THIS WORLD! Even marv who's not a sorbet fan was converted!

Back in action!

Hi pple, sorry i've been missing in action for such a long time. sorry to all my loyal fans out there ^_*. Thanks to the encouragment of my internet savvy friends, i've decided to try and pick up my blog again! I'm sure the pple who knw me well enough should know that i've still been continuing my NEVER ENDING search for food! except i haven recorded it down here...

OKOK so herez the plan, i'll reveal my missing adventures bit by bit so you guys wont be rolling over in hunger!

Bagan - Burmese cuisine

This wkend was a GASTRONOMIC wkend! After not going down to the city for food for almost a month, my greed knew no bounds. Surprisingly the first thing we did when we reached the city was not EAT ^_* talk about self-control! My mama will be really proud of me :)

Without a doubt, eating was the secong thing we did. We went to our all time favorite korean restaurant MADANG hidden in a little alley off pitt street. Unfortunately we were starvin by the time we got there so i forgot to take any pics. paiseh paiseh, next time i will.



Anyway the second place we went was a BURMESE restaurant called BAGAN in Strathfield. Special thanks to Charismatic and Andre Lam who brought us there. Dont mean to brag but it's the ONE AND ONLY BURMESE RESTAURANT in SYDNEY!!! I was ashamed of myself, how could I , the food connoiseur, not know about after 6 yrs in sydney????

Erm... I 'm sure most of us have no idea watsoever about burmese food. Well, according to wikipedia Burmese cuisine if influenced by chinese,thai and indian cuisine. The dishes usually do not contain pork or beef as avoided by the muslims and buddhist respectively. For more info, visit http://en.wikipedia.org/wiki/Cuisine_of_Burma.

Dishes ordered:
1) BAGAN CHICKEN
2) DURIAN SHAKE
3) GOAT CURRY
4) Burmese fried rice
5) Sweet, sour, spicy fish
6) stirfry kang kung

BAGAN CHICKEN

Personally, I recommend the BAGAN chicken which was deep fried chicken coated in a thin batter and fried with a sweet, sour, savoury, spicy flavor. It was a explosion of flavors in the mouth. The chicken was crispy on the outside and tender on the inside. Apparently the spiceness is not for the faint hearted, so being "chicken" we ordered it with 'less spice'

The goat curry is another dish that I highly recommend to pple who like eating lamb/mutton. It is like a in between of rendang and curry. The goat is cut in bitesize cubes and it melts in ur mouth...

Last but not least is the ULTIMATE DURIAN SHAKE! Only one word...SHIOK! On the first mouthful I felt like I was back in Geylang in Singapore. On the second mouthful I imagined myself in Malaysia for holiday. On the third mouthful I felt like I was on the roadsides of thailand. For those that dnt knw, durian in South east asia comes mainly from malaysia and thailand.

Pandan Chiffon Cake


I have not been back to the city for 2 wks... have been suffering from withdrawal symptoms from GOOD food since. Ask marvin and he'll tell you how miserable I have been :( My hunger and desperation has inspired me to discover a few new recipes and this is one of them. Improvised from http://lilyng2000.blogspot.com/2006/03/pandan-chiffon-cake.html. Special thanks to MKBJ whose role was my kitchen assistant "by choice" ^_* ttz wat BF's are for :) I apologize for the weird measurements as I do not have a weighing scale so i make do with what I have, it is accurate enough though, beggars cant be choosers!

Ingredients:

150g cake flour OR 1.1 cups of plain flour
1/2 tsp baking powder
1/4 tsp salt

8 egg yolks
1 tbsp pandan essence (according to how strong you want the flavor)
300 ml AYAM coconut cream
160 g castor sugar / 0.6 cup of raw sugar

9 egg whites
1 tbsp castor sugar
1/2 tsp cream of tartar

Instructions:


1) Heat coconut cream in pan over low heat and dissolve 160 grams of sugar. Leave to cool.
2) Sift flour, salt and baking powder together.
3) Mix egg yolks, pandan essence and coconut/sugar mixture thoroughly.
4) Slowly add flour mixture to above and mix until batter is smooth.\
5) Preheat oven at 160 degree celsius
6) Whisk egg whites, sugar and cream of tartar until stiff peaks.
7) Add 1/2 of egg white mixture to green batter and fold it in slowly.
8) Fold in the rest of the egg white mixture.
9) Pour into 23 inch tube pan.
10) Bake at 160 degrees celsius for 45minutes.
11) Take the cake out of the oven and invert the mould
12) Allow to cool like that for 1 hour
13) Use a knife to loosen the sides of the cake from the mould.

Wala!

For convenience, instead of buying a tube pan, I used a 20cm spring form pan and baked it in 2 batches. The smaller the pan you are using, the shorter the cooking time. To tell if the cake is done,just stick a satay stick through and make sure that the batter does not stick.

Braised Duck Wings


This is an all time favorite snack in my family! My mummy used to buy it as a treat on Sunday morning at the market. We 3 kids use to wait at home starving. By the time she came home with the duck wings - to us they were the tastiest wings we had ever eaten. So whether its really yummy or its an "acquired taste", i'll leave it to you guys to decide ^_*


Ingredients:

1 kg duck wings
4 cloves garlic
5 cloves shallots
1 small knob of galangal (~1 tablespoon)
1/2 a stalk of lemongrass

**quantities can be varied according to personal preference.

Seasoning:
Dark Soy Sauce *
Light Soy Sauce
2 level tbsp brown sugar

* amount of dark and light soy sauce would depend on the type of pot used and amount of water needed to cover the duck wings.

Cooking instructions:
1) Blend/Process/Finely chop garlic, shallots , lemongrass and galangal.
2) Fry above with 3-4 tbsp of vegetable of oil until fragrant
3) Throw in duck wings and mix thoroughly.
4) Sprinkle the sugar over the duck wings and mix to coat.
5) Pour in the dark soy sauce according to the your preference of how dark/black you want the wings to be. Then add light soy sauce to taste. Fill with water just enough to cover the duck wings.
(note : the more you simmer the thicker/saltier the sauce will be, so be prepared to add more water if necessary)
6) Bring to boil and cover to simmer under low fire for approximately 45 minutes.
7)Remove duck wings from sauce and allow to cool at room temperature.

optional : You can keep the remaining sauce and use it to simmer and cook other food stuff such as hard boiled eggs, firm tofu, pork belly, and chicken)

Boston Baked Beans for idiots

Marvin and I first ate this hearty dish on a rainy saturday morning during winter at a quaint little cafe hidden in surry hills called CAFE-ISH. Baked beans flavoured with smoked ham hock served with buttered toast on the side. Eating it made me feel warmth radiating from the inside out. So simple yet so satisfying...mmmmmmm. Anyway, I decided to replicate the dish at home so I could have it anytime i want. The picture above is as close as i could get, next time i'll take pics with my new digicam.

P.S. Hey Grace, Josh & Cheryl, try this and let me know if you think it taste similar to cafe-ish?


Ingredients:
1 smoked ham hock
1 can of 420g HEINZ baked beans (with tomato sauce)
1 brown onion
1/2 celery
1 carrot

Note: you can vary the amount and type of veggies according to your liking.

Seasoning:
- Tomato sauce
- Worcestershire sauce
- salt
- pepper


Instructions:

1) Place ham hock in a big pot with enough water to cover it. Bring to a boil and then let it simmer. Add a pinch of salt.
2) Dice the veggies.
3) After simmering for 20 minutes or so, add in the diced veggies.
4) Continue simmering (approx 45 mins or longer) until ham hock if tender enough for you to easily peel the meat of the bone. Throw the away and peel the meat into bitesize chunks and throw back in the stock.
5) Reduce remaining stock. Then add in the baked beans. Flavour with tomato sauce, worcestchire, salt and pepper according to personal preference. Try not to stir too vigorously as beans will break up easily.
6) Continue to reduce until desire consistency for baked beans. I like my bake beans with a slightly more watery consistency so that i can dip the toast in sauce.
7) Serve with buttered toast! ENJOY :P
