Thai Pineapple Fried Rice



This is one of my favorite thai dishes, however I have eversee it being served in the Thai restaurants in sydney. It is usually served beautifully in a pineapple 'shell' but I am too lazy to do that. I discovered the recipe in a cook book called Simply Thai. The recipe was great though, ask marvin for the review :) Its really easy to make and doesnt take lots of time. Enjoy!

Recipe serves 4

Ingredients:
2 cups cooked Jasmine Rice, (Note: do not make rice too wet as it will stick to the pan)
250g prawn or chicken, coarsely diced
1/2 pineapple, cut into cubes (Note: drain the xs juice from the pineapple as u do not want the fried rice to be wet ad sticky)

3 shallots
4 cloves of garlic
3 stalks coriander
pork floss for garnishing

Seasoning:
1.5 tbsp red curry paste
1.5 tbsp of curry powder
salt to taste
Note: amount of red curry and curry powder used depends on how spicy you want it to be.


Instructions:

1) Blend shallots,garlic and coriander into a fine paste.
2) Heat oil in wok and fry the paste till fragrant, then add red curry paste and curry powder, fry till fragrant.
3) Add rice and until rice is evenly mixed with paste.
4) Add prawns/ chicken and fry till cooked.
5) Add salt to taste.
6) Lastly, add pineapple and mix until even, then quickly turn off the fire.
7) Garnish with pork floss and coriander.

Cafe Sopra @ Fratelli Fresh

I visited this cafe with MKBJ in Nov 08 by recommendation of eatability! The food was amazing, we were blown away by everything tt we ordered! The atmosphere was really rustic and comfortable for a long lazy lunch. It is located on Danks St in Waterloo, only just a few steps from Hillsong church (my favour-dest church!). They have a branch in Potts Point too, but the waterloo atmosphere is so much better and peaceful. Cafe Sopra is a cafe that is attached to Fratelli fresh which is a grocery store with emphasis on fresh food and italian groceries. Check out the groceries even if you dont feel cafe, so interesting! anyways here's wat we devoured!!!

ENTREE: We had the Cured Meat Platter which was simple yet sublime... It had 4 cuts of fresh cured meat namely pancetta, prosciutto, smoked ham and salami and topped with lemon juice. The flavours of each meat was so distinct thought all made from pork. yummy...

MAIN : We had the panfried SARDINE BUSCHETTA topped with pesto. Lovely!!! The simple bruschetta had been turned into this! The panfried sardine melted i ur mouth and the sourdough at the bottom of the dish was soaked with the tomato puree and juices of the fish. Even guys who only eat meat would give way.

DESSERT: We were really full after mains but as the galz say 'therez always space for dessert' (personally i tink tt we subconsioucly dnt finish our mains so we can save space for dessert, but WHO CARES!) We had simple strawberry and lemon gelato for dessert! It was OUT OF THIS WORLD! Even marv who's not a sorbet fan was converted!

Back in action!

Hi pple, sorry i've been missing in action for such a long time. sorry to all my loyal fans out there ^_*. Thanks to the encouragment of my internet savvy friends, i've decided to try and pick up my blog again! I'm sure the pple who knw me well enough should know that i've still been continuing my NEVER ENDING search for food! except i haven recorded it down here...
